I'm answering my own question and following it up with another...
I went ahead and tried it and it almost works. I've configured Mail Server to use EIMS as it's internet gateway and everything's working fine with one exception...
Outgoing internet mail gets successfully transferred to EIMS which then takes over and sends mail successully. What I'm not able to do is get incoming internet mail routed from EIMS into the TF mail folders.
