Mount the disks on a machine with a SuperDrive (1.44mb) and then use ShrinkWrap (shareware) to create disk images. Compress these into a Stuffit archive across multiple 800K disks. Extract the archive on the Mac II and drop the disk images onto ShrinkWrap on the Mac II, and hey presto the disks'll appear on the desktop :)

Just out of interest, I thought all Mac II had SuperDrives.
